Cooking recipes : Cheesecake

The original cheesecake comes from New-York and you can have it with some red fruit filler. There are several possibilities to make this fresh and unctuous cake.

Preparation : 10 minutes
Cooking time : 40 minutes

Ingredients (for 6 people) : 

Bottom of the cake :
- 200g of speculos biscuits (or other biscuits)
- 80g of butter

Topping :
- 1kg of 'St Moret' cheese (or 3 'family' cans) - or other fresh cheese.
- 150g of sugar
- 2 eggs
- 1 tea spoon of liquid vanilla

extra :
- red fruit filler

Preparation : 

Preheat the oven at 180°C (power 6). Put the speculos in the mixer to obtain a powder, than mix it with melted butter. Put the mixture on the bottom of the mould (anti adhesive is better), tamp it, and put in the oven for 10 minutes. Mix the cheese with the sugar, the eggs and the vanilla (it would be better to do it with the mixer, to get an almost liquid preparation). Pour the mixture on the already cooked biscuits preparation.

Cook it in the oven for 25 to 35 minutes according to your oven effectiveness (the less you cook it, the more creamy it will be).

Let it cool down and put it in the fridge for 4 hours minimum, one night being the best.
Serve with red fruit filler.
